My client requires a Food and Beverage Manager to manage the food and beverage outlets; maximize sales while maintaining excellence in customer service and management of the food and beverage staff. The successful Food and Beverage Manager will have experience in the hospitality industry, preferably experience as a Food and Beverage Manager, Restaurant Manager or Assistant Restaurant Manager. Administration/Operations •Manage the food and beverage outlets, which may include but is not limited to, the snack bar, convenience carts, bar/lounge area, restaurant/dining area, catering/banquet department and the kitchen •Ensure that proper presentation and quality of food and beverage standards are being met at all times •To deliver centrally produced core menus to specification on a consistent basis. •Create and develop specials menus and specials menu pricing in conjunction with the Head Chef •Maintain clean and orderly food and beverage operations at all times •Implement and enforce policies and procedures regarding proper sanitation, food preparation and storage, cash and credit card processing and safety •Purchase food, beverages, supplies and equipment as needed from nominated suppliers. •Responsible for controlling food, beverage and labour costs by accurately estimating needs and utilizing correct procedures for purchasing and staffing •Establish and maintain effective inventory and shortage controls •Handle customer enquiries, concerns and comments and provide answers or solutions •Acquire feedback from co-workers and customers to ensure satisfaction and for service improvement ideas •Develop and execute the yearly food and beverage plan and budget •Utilise labour scheduling tool to adjust salary and hourly schedules with regard to demand patterns, budget and local labor laws and post weekly schedules •Ensure tracking for expenses such as payroll, supplies, maintenance etc. •Generate a monthly inventory report, cost of sales report and other reports, as requested by management Sales •Work with the General Manager to facilitate the proper handling of room rentals, special event/banquet obligations and the creation of event contracts •Approve all bookings for catered activities •Identify new sales opportunities and maximize sales potential through aggressive marketing, including flyers, telephone soliciting, brochures and promotional events in conjunction with General Manager and Sales Team. •Originate and plan creative events and themes for members and guests •Develop new program concepts to ensure customer satisfaction and repeat business Management •Manage the entire food and beverage staff •Responsible for making schedules for the food and beverage staff •Train staff on new processes and procedures, including training on the POS system •Conduct regular meetings with the food and beverage staff •Assist General Manager in the delivery of other staff meetings •Interview and hire food and beverage candidates •Responsible for reviewing performance of co-workers and carrying out disciplinary action as necessary •Remain up to date on all course events and upcoming activities that will affect the operation of all food and beverage outlets •Undertake food hygiene training as required •Maintain knowledge of local competition and industry trends •Ensure all appropriate food safety legislation/regulations are adhered to •Deliver budgeted F&B margins on a consistent basis |
